Baked protein packed falafel

I’ve been trying to improve my falafel recipe for a couple of months now, don’t get me wrong they always came out edible, but they always lacked a little spice and came out very dry when baked.  So after lots of attempts I finally came up with the perfect baked falafel, its got the perfect amount of spice for a little kick and I added some protein powder for a protein boost! 





* 1 Can chickpeas, drained and rinsed

* 1 tsp cumin

* 1/2 tsp coriander

* 1 tsp mild curry powder 

* 1/2 tsp paprika

* 1/2 tsp baking powder

* 1 tbsp hemp seed powder

* 2 tbsp olive oil

* 1 tbsp soy sauce

* 1 tbsp sesame seeds

* 2 heaping tbsp wholewheat flour

* 1/2 a small onion, chopped finely

* 2 cloves garlic, minced



Preheat oven to 350 degreesF.

In a bowl add chickpeas, cumin, coriander, curry powder, paprika, baking soda, hemp powder, olive oil and soy sauce.  Mash everything together until all the chickpeas are mashed. ( i used a fork and my hands)  Next stir in the flour till well combined. Fold in the onion, garlic and sesame seeds.  Place in fridge for 10 minutes, so the flavors can marinade.  Grease a baking sheet and form little flat balls, grease the top of the falafel lightly ( this makes them brown nicely) .  Bake in the preheated oven until lightly browned , about 15 minutes, flip and bake for another 5 minutes.  Remove from oven and let them sit for 5 minutes.  Enjoy with a salad or in a pita.
