The sun is out and it looks like its going to be a beautiful weekend 🙂 Here is an amazing broccoli bake that’s perfect for a diner party. This can be served as a main meal or as a side dish.
BROCCOLI BAKE WITH STREUSEL TOPPING -serves 4
- 1 large head broccoli, cut into florets ( lightly steamed)
- 3 carrots, chopped – Optional ( lightly steamed)
White sauce Ingredients
- 5 tbsp margarine
- 1/4 cup flour
- 3 cups soy milk
- 1 cup vegetable stock
- 1/2 tsp nutmeg
- 1 tsp mustard powder
- 1/4 tsp cayenne pepper
- salt and pepper
Melt the margarine in a large saucepan over medium heat. When its melted add the flour and whisk until smooth.
Continue stirring until the flour is a golden color about 6 minutes. Increase heat and slowly whisk in milk and vegetable stock until it starts getting thick, bring to a gentle simmer, reduce the heat to a medium low. Season with nutmeg, cayenne, mustard powder, salt and pepper.
Streusel topping Ingredients
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1/4 cup nutritional yeast – optional
- 1/2 cup breadcrumbs
- salt and black pepper
- 1 tbsp olive oil
- 2 tsp mustard powder
Saute the onion and garlic in the olive oil until soft. Stir in the mustard powder stirring through. Add the breadcrumbs and the nutritional yeast stirring for 2 minutes. Remove from heat and season with salt and pepper.
Preheat the oven to 350 F.
Arrange the broccoli florets in an ovenproof dish and evenly ladle the white sauce all over.
Sprinkle over the streusel topping. Place the dish on a baking tray and bake for 25 to 30 minutes until the streusel is browned.
