This is a great side dish that is a great alternative to mashed potatoes. The garlic gives it a great savoury taste that makes this a winning recipe
GARLIC MASHED BUTTERNUT SQUASH
- 1 medium sized butternut, peeled, seeded and cubed
- 2 tbsp margarine
- 4 cloves garlic, peeled and finely chopped
- 1 tbsp fresh parsley, chopped
- salt and pepper to taste
- splash of non dairy milk
Place the butternut in a medium sized pot cover the butternut with water. Bring to boil for 10 -15 minutes or until easily pierced with a fork.
Drain the butternut and place in a bowl. In a small pan melt the margarine and sauté the garlic until fragrant. Poor the garlic mixture into butternut mixture and start mashing. Splash in as much milk as needed until a perfectly creamy texture is achieved. Fold in the parsley and season to taste. Serve Immediately.
