Year End Function Of Dooooooom

Yes, I know I’m being ridiculously dramatic, but we all need a bit of drama in our lives…..and I’m not exaggerating that much.

Let me get to the theme, it was called the sweet escape, so of course I had no idea what that was about, turns out it was all about the candy. GAAAH, just call it candy land, you are NOT being clever.  Yes, I know I’m complaining about something silly, but when you’re surrounded by mimes that keep touching you and sneaking up to you from behind you might get a little grouchy.  There was also people on stilts, jugglers (that kept dropping the balls), magicians (that acted like that just to eager waiter that waits till you just have so much food in your mouth and now you have to say, yes I’m okay.  This guy was worse! he kept doing magic right at the table and kept asking people to pick a card when their faces were stuffed) and the balloon animal makers.

It wasn’t all bad,  I have to say the end when I could leave was my favourite part, even the hour long drive home was better than there.  Hey, at least the place was pretty.

Happy Thanksgiving

Happy thanksgiving to all my American friends.  I hope your day is filled with love, family, thanks and food. I on the other hand will be attending a year end function.  I lost some weight so my dress is way to big for me, safety pins to the rescue!


What I wore Wednesday

Today I didn’t feel like wearing make up and I was going to be all loud and proud about feeling comfortable with your own face and being happy with it, because you’re unique, but my camera decided to chop off my face.  Thanks camera, I wont be inspirational again.


German Hot Dogs

If you were wondering what I ended up doing with those pretzel rolls, here it is.

This loaded German inspired hot dog is a treat for any occasion.  Filled with sauerkraut, radish, rocket and mustard this is definitely a recipe you have to try.


For the sausage I used Fry’s vegetarian brand and I have to say it was so bland, but yet left a weird kind of plastic like taste in my mouth after that kept lingering, but that’s just my opinion.  I personally don’t like using meat alternatives a lot, but when I do I don’t want to faff with it for ages trying to make it taste better. Yeah, each to their own, a lot of people love this brand, because they’re making a difference for the vegetarian market.  I just don’t like that everything tastes so bland and when it doesn’t its overly spiced with cinnamon ( shout out to the curry pie).  Okay, rant over.  Sorry if I offended anyone :D.




  • Soft pretzel rolls
  • Sauerkraut
  • Radish, chopped
  • Rocket, washed
  • Butter lettuce, washed
  • German mustard
  • Vegan mayonnaise
  • veggie hot dogs


Spread mustard on both sides of the pretzel rolls. Spoon a tablespoon of sauerkraut on the roll.  Place a piece of lettuce and rocket on the roll.  Place the hot dog in the roll and arrange the radishes on the side of sausage.  Drizzle with mayonnaise.  Serve immediately.


Weekend Recap

The weather here has been slightly ridiculous.  It seems like its going to be a sunny day and wham denied! I will be rainy and thundery for 2 hours then sun, but wait…Now I feel like raining while the sun is shining.  It seems like the weather is suffering from a mild case of bipolar.

With this strange weather weekend hiking was taken off the table.  Why? because I’m petrified of thunder and frogs. So unless I wanted to have a panic attack hike other arrangement had to be made.  So here are my weekend photos.

Soft Pretzel Rolls

The best way to celebrate a Friday is with a delicious pretzel roll.  I needed hotdog rolls for one of my delicious German inspired gourmet hotdogs (recipe coming soon), so it got me thinking.  Why not make pretzel rolls for a really delicious treat.

These rolls are soft in the middle yet crunchy on the outside.  It can be formed into dinner rolls or hotdog buns.

  • 4 cups all purpose flour
  • 1 cup almond milk or soy milk
  • 2 tbsp brown sugar
  • 1 package instant yeast
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 cup baking soda
  • coarse salt for sprinkling


In a small saucepan add the milk and sugar.  Heat the milk ( luke warm).  Remove from heat and sprinkle the yeast over the top.  Let sit for 10 minutes or until foamy.


In a large bowl add the flour and garlic powder.  Pour the yeast mixture and oil over the flour and combine.  If its to sticky add more flour.

On a floured surface knead the bread for 10 minutes.

Place in an well greased bowl cover and let rise for 15 minutes.


Form the dough into hotdog roll shapes and let sit for 5 more minutes.

Preheat oven to 425F.

In a large pot, bring 8 cups of water to boil.  Add the baking soda.  One at a time drop the dough into the mixture and boil for 30 seconds on each side.


Place rolls on a greased baking sheet.  Slice the tops of the rolls three times.  Sprinkle with salt.


Bake for 15 minutes or until golden brown.  Serve.

Chai Tea Pineapple Upside-Down Cake

Yes, this is another tea recipe, but once you’ve tried this easy version of pineapple upside-down cake you will never want any other cake recipe.  This cake is so delicious and its even better the next day.  The combination of pineapple and chai tea makes this cake pop.  Serve this with banana ice cream for a truly amazing combination.

  • 1 1/2 cups all purpose flour
  • 3/4 cup brown sugar
  • 1 tbsp corn flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp white vinegar
  • 1 tbsp vanilla essence
  • 1/4 cup sunflower oil
  • 1 cup chai tea

Pineapple top

  • 1/2 cup brown sugar
  • 1/2  cup margarine
  • 1 medium pineapple, peeled, cored and cut into rings


Preheat oven to 350F/ 180C.

In a large bowl combine the flour, sugar, salt, cornstarch, baking powder and baking soda.  Pour in the vinegar, vanilla, oil and chai tea, stir until well combined.

Spread the margarine on a cake pan and sprinkle it with remaining sugar. Arrange the pineapple over the sugar.

Pour the batter over the pineapple and bake for 40 -45 minutes or until golden brown and a toothpick comes out clean.

Remove from oven and let sit for 15 minutes. Flip the cake out on a plate and remove pan.  Serve.

Zucchini Pasta Salad

Who needs pasta salad when you can make this healthier version.  This is gluten free and lower in fat, all thanks to the great zucchini noodle!

This is a perfect recipe for potlucks, picnics, dinner parties or just to sit at home and eat it all by yourself.





  • 1 large zucchini, spiralized
  • 2/3 cup thinly sliced red onion
  • 20 cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1 cup romaine lettuce, chopped into bite sized pieces
  • 3/4 cup pitted black olives
  • 1 small green pepper, chopped
  • 1/3 cup red wine vinegar
  • 2 tsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp agave nectar or any other liquid sweetener
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup extra virgin olive oil


In a small bowl combine the red wine vinegar, lemon juice, garlic, agave, dried oregano, basil, black pepper and olive oil.  Whisk well.

In a large bowl combine the rest of the ingredients.  Pour the vinaigrette over the pasta salad and toss.  Serve Immediately or refrigerate.


Garden Update

Its been rainy here and the garden is loving it.  Like the garden I’m also loving it, is there anything better than a good excuse to cuddle up on the couch and watch movies?, but I didn’t just sit around the whole weekend, I also discovered my catnip…..I completely understand cats now.  What is my catnip you ask? Chocolate Mint!  I don’t know why no one has never told me about this wonderful little herb, but now that I have it I want fields! I want to roll in it and just live in a house surrounded by this little green gem. Okay, okay, this rant is over and on with the garden photos!
