I decided to share a fast, easy, one skillet meal that will get you back to your weekend activities in a jiffy. Feel free to change up the veggies for whatever you have on hand.
SAVOURY SKILLET RICE – Serves 6
- 3 1/2 cups cooked brown rice
- 4 cup vegetable stock
- 1 red onion chopped
- 4 cloves garlic, chopped
- 1 green pepper, chopped
- 1 large carrot, peeled and diced
- 1 cup broccoli florets, chopped
- 1 cup cauliflower, chopped
- 1/2 cup kale, chopped
- 1/2 cup spinach, chopped
- 1 can diced tomatoes
- 2 tsp smoked paprika
- salt and pepper
- 2 tbsp olive oil
In a large pan over medium heat, heat the oil. Add the onion, pepper, paprika and garlic. Cook until fragrant.
Add the rice, vegetable stock and diced tomatoes. Stir until combined. Add the remaining ingredients. Simmer for 15 – 20 minutes or until the liquid has been absorbed. Season with salt and pepper and serve.
