This is a great alternative for mashed potatoes. With Christmas coming up we don’t want everyone to feel like fat little piggies and this mashed cauliflower is a delicious low carb alternative that everyone will love.
GARLIC AND HERB MASHED CAULIFLOWER
- 1 medium head cauliflower, chopped into florets
- 2 cloves garlic, minced
- 1/4 cup non dairy milk
- 2 tbsp margarine or olive oil
- 1 tbsp fresh chives, chopped
- 1 tbsp fresh parsley chopped
- salt and pepper to taste
Place cauliflower in a stockpot filled with water. Boil for 15 – 20 minutes until very tender.
Place the cooked cauliflower, garlic, margarine and milk in a blender and purée until smooth.
Stir in chives and parsley and season to taste. Serve immediately.
