Black-Eyed Pea Hummus

Black-Eyed Peas are not just for new years day.  Maybe just maybe if we eat this a lot we will be blessed it all the luck and if you’re not, well at least you’ve got some delicious and easy hummus to devour.

This is an easy recipe, that uses simple ingredients that tastes amazing, made without tahini, because sometimes you just don’t have any left.

BLACK- EYED PEA HUMMUS

Ingredients

  • 1 can drained black-eyed peas
  • 1 lemon, juiced
  • 1 clove garlic
  • 2 tbsp olive oil
  • 4 tbsp water
  • 1 tbsp nutritional yeast ( optional)
  • salt and pepper to taste

Directions

Place everything in a blender and blend until smooth.  Add more water if its not creamy enough for your liking.  Serve with fresh vegetables or anything that is dippable.

I didn’t spice this recipe up as I wanted to keep it simple, with subtle ingredients that make this a great sandwich starter.

Grayed Jade

I’m really in love with this colour, its like my two favourite colours got married and had the most beautiful child in all the land.  Grayed Jade just looks good in everything, from dresses to home furniture just everything, If I could I would have my whole room painted this colour, just kidding, that would be a little obsessive…or will it?!  Its a soft pastel colour that just relaxes my mind, so just excuse me for a minute while I go find something to paint.

What I wore Wednesday

When it rains, it pours…and after that its really sunny and hot again.  Thank you day for being real confusing, but at least I got to bundle up with a scarf and an oversized jacket.  I hope everyone’s Wednesday is going smoothly like a well spread peanutbutter sandwich.

Also when you don’t have electricity for a whole day you get kind of silly in photos.  Like blurry yet cool photo, the lean back into it photo and the oh no I don’t think I’m going to be in this photo bend.

Greek-Style Chickpea Pita Wraps

The day has finally arrived.  Yes, I am finally posting my recipe for vegan gyros!  These are just a taste explosion! Delicious lemon and coconut cream make these a wonderful duo that’s will make you keep wanting more all this wrapped in a soft and doughy pita wrap.

This is an easy to make recipe that will knock your socks off! Well if you don’t like lemon flavours you will probably be adjusting your socks while going meh.

GREEK- STYLE CHICKPEA PITA WRAPS6 pita wraps

Ingredients

  • 2 tbsp olive oil
  • 1 onion, peeled and chopped
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 3 tbsp coconut cream/ any non dairy cream
  • 1 /4 cup fresh lemon juice
  • 1 tsp curry powder
  • 1/2 tsp cayenne
  • salt and pepper to taste
  • 1 tsp coconut sugar
  • 1 can drained chickpeas
  • 6 pita wraps
  • lettuce
  • diced tomatoes
  • Diced cucumber
  • black olives
  • vegan mayonnaise

Directions

In a large skillet over medium to high heat, heat the oil.  Add the onion and garlic, Sauté for 2 – 3 minutes until fragrant.  Add in the chick peas and spices.  Stir well and star mashing things up while it cooks, you want it to be chunky.  Turn the heat down and add the coconut cream, sugar and lemon juice.  Combine well.  When the liquid is mostly absorbed, add the salt and pepper to taste.  Remove from heat.

Assemble

Warm a pita wrap,  lay a piece of lettuce flat on the wrap and place a good dollop of chickpeas on it, add some tomatoes, cucumber, olives and a drizzle of mayonnaise,  wrap and enjoy.  This wrap is also good cold.

An instant of life captured for eternity

Life has been rather stressful lately and not your willy nilly stressful. So stressful that insomnia is unavoidable and migraines come to visit you everyday.  I’m trying to keep everything easy and take life one day at a time, which is really hard for me, because I’m a chronic planner and I need to know what is going on at all times, but I’m feeling better and just letting things happen, everything will work out the way it should.  Why am I so stressed? Well buying this house did not happen, because you can’t get a loan if you don’t have a credit score, well excuse me, I’ll just quickly go get in debt and get back to you in a couple of months Bank.  We’re renting this place on a month to month basis now, which just means any moment someone can by the house and we have to get out of here.  Trying to find a place to rent is so hard, everything is so hideous! No hope for improvement, because you cant put glitter on a turd and think it will look good.  We’re looking around and hoping to find something soonish, but I’m sure everything will work out, but enough about that.  Here are some photos from life lately.

Pita Flatbread

Oh bread, why do you have to be so delicious?  With so many people giving up gluten, I kind of feel bad posting this delicious recipe, but really this flat bread is so soft and delicious and smells like heaven send down some dough angels.

Why make pocketless pitas? Vegan chickpea gyros, that’s why! Well that’s a recipe for another time, the possibilities are endless with these delicious flatbread! flatbread pizza’s, Greek tacos or just dip it in peanutbutter.

PITA FLATBREAD6 servings

Ingredients

  • 3 cups all purpose flour
  • 1 package instant yeast
  • 2 1/2 tsp sugar
  • 2/3 cup warm water
  • 1/2 cup soy milk
  • 2 tbsp olive oil
  • 1 tsp salt

Directions

In a large bowl whisk together the yeast, warm water and sugar.  Let sit for 5 minutes or until foamy.  Add in the milk, olive oil, salt and 1 cup of flour.   Mix until well combined.  Add the remaining flour until a dough has formed.   Remove dough from bowl and knead on a well floured surface for 5 minutes.  Transfer the dough back to the bowl and coat with oil.  Cover and let sit for 45 minutes.

Press dough down and divide into 6 equal portions. Working with one piece at a time, roll the dough into a round disc.

Heat a large non stick pan on medium high heat.  Once the pan is hot, add the flatbread and cook until bubbles appear on the surface and the bottom is golden brown, flip and cook the other side.  Conitinue with the rest of the flatbread.

Store in an airtight container, these are best served the day prepared, but can also be reheated by placing a damp paper towel over it and placed in the microwave for a couple of seconds.

What I wore Wednesday

This week in what I wore Wednesday!  Apparently I’m so pale that light on my face makes me disappear.  It wasn’t a great taking photos day, I just couldn’t seem to get my face in so now its a little weird faceless post.  Also What I wore Wednesday is featuring yet another item of clothing from my dearest manfriend (the hat), what can I say that boy’s got some sweet clothes.

Refresher Juice

This is a great post- work out juice, its refreshing enough to cool you down and rehydrates you like a succulent plant that’s received water after a drought.  Its so refreshing you will just feel your face light up after drinking it as well as making your taste buds explode with deliciousness.

Made with cucumber,pineapple, carrots, apple, pear and ginger its a little dynamo of a juice.

REFRESHER JUICE 2 servings

Ingredients

  • 1/2 a cucumber
  • 2 medium carrots
  • 1 stalk celery
  • 1 gala apple
  • 1 pear
  • 1 small pineapple
  • 1 inch ginger

Directions

Place everything in your juicer.  Give it a stir and serve immediately.

This is way cheaper than a spa day so go get your juice on!

A Weekend Filled With MAN FLU

On Friday I started feeling the early symptoms of a cold….dun dun duuuuuun, but I sent that cold straight to hell, with a lot of juice, smoothies, vegetables, tea and vitamin pills.  Unfortunately none of that helped Carl.  The man flu is real and it can’t be stopped, one second everything is okay and the next bam! You’re looking in the eyes of a sick baby, I felt really terrible, I woke up on Saturday feeling incredible and really hyper.

How do you deal with a man flu? Well first things first let them take all the pillows and make a weird pillow fort on the couch, while watching lots and lots of anime, secondly don’t get a shock when you go into the bathroom and find 3 towels used to dry themselves, just don’t ask any questions. The last and yet most important thing, treats have lots of treats on hand, this makes everything run smoothly.

It was a rather humorous weekend, I’m sure I was rather annoying, making him drinks cups and cups of yarrow tea, juicing it up and just making sure he is warm the whole time, but hey I got results! Health level back up!

That’s how you cure the man flu!

A Gift From Sobriety

This sober adventure sure has been a roller coaster ride.  When I decided enough was enough, I did not know all the side effects/detoxing would be so terrible, the severe depression when you would go out and all you want is a glass of wine, I mean so depressed that you feel like crying, the headaches that just kept lingering, nightmares almost every night or the worst of all realizing alcohol was a crutch and not dealing with emotions normally, would make you a crying drunk at some point.

Two and half months into sobriety, I got the most amazing gift of all.  Great skin! When I was still drinking my skin was constantly dry, blotchy and I even started to notice light wrinkles, but now my skin has gone from that, to feeling healthy, radiant, even toned and I have even noticed the little wrinkles are gone.  Thinking back on it I think I had so much toxins in my body that I could kill a country!

Sobriety has been a huge shocker for me, its made me realize that I was living life, but not truly experiencing it,  that life is way better without alcohol, that I don’t need a drink to function and that sleeping is way easier than I thought.

I’m still getting used to being sober, I mean its weird to be able to smell everything, taste food completely and kind of feeling high on life.  Who knew the world was so bright?!  This is a wonderful time in my life and I’m really excited to be experiencing without any beer goggles.

If I was drunk I would never have caught Belphie eyeing out Princess Tofu!
