Green Vitality Smoothie

Everywhere you look you see people talking about drinking lemon water.  I can see why with its none cleansing and vitality effects on the body, its a morning ritual everyone should follow.  This smoothie is based on the lemon water idea, but just with added nutrients, like the lemon peel.    The beautiful yellow lemon peel is often discarded without a second thought, but did you know lemons peels contain more vitamins than lemon juice?  Yes, this little gem that gets used in numerous recipes, is actually really good for you.   The lemon peel is filled with fibre, magnesium, potassium,  calcium, folate and beta-carotene.  This is great way to cleanse and detox your body.

This smoothie gets its vibrant green colour from swiss chard.  This little powerhouse is filled with vitamin K,A and C, as well as a good source of magnesium, iron, potassium and fibre.

I drank this smoothie in the morning right after a workout and felt energized the whole day, my skin felt like it was glowing and I woke up the next morning feeling completely refreshed and wonderful.  This is a morning smoothie that should be in everyone’s morning routine.

  • half a lemon, washed
  • 1 cup swiss chard,  washed
  • 2 gala apples, peeled, cored and chopped
  • 1 frozen banana, peeled and chopped before freezing
  • 1 cup water

Place everything in a blender and blend until smooth, making sure you have no lumps in your smoothie.  Serve immediately.

an instant of life captured for eternity.

While most people go out for a drink or shake their booties at the club on the weekend and have the best time ever, I’m at home with my pretty man friend having a harry potter marathon.  Don’t get me wrong I love whipping out my ridiculously embarrassing dance moves when I get the chance, but I do love me a good lazy weekend.  Kidding. it really wasn’t that lazy. We did watch harry potter, but we did a lot of stuff in between.

We’ve almost completed the mosaic table, we got way to little tile grout, so we still have a lot of grouting to do, but so far this is the most rewarding project to date.  Turning something like a simple tin table into something beautiful is the best feeling ever.  We also went to donate some stuff we no longer use to an animal shelter charity shop, while we were there, I got to look at all the animals, somehow I managed to make all of them bark, while saying “who is a pretty doggie?! You are a pretty doggie!”.  Its always hard to go look at these animals, I always just want to adopt them all!

The horses have gotten way to fond of our place and seem to be hanging around a lot these days.  It might be the carrots and apples I give them, or the delicious grass we have growing in the garden.  All I know is, we have large new friends around now, that are the best mowers in all the land.

^^ Look at this beautiful mushroom.

^^ Say hello to the horse!

^^ This is fire.  He was really intrigued by the camera.

^^ I wish I was this photogenic.

^^ Magic is all around us and found when you actually start looking around you, instead of relying so much on technology for entertainment.

^^ Starting the tile grouting.

DSC04357^^ I also decided to get some winter flower seeds so even during winter we will have beautiful flowers.

I hope everyone had a restful weekend and is excited for the week.

Garden Update

Since moving to the new place, I truly believe everything happens for a reason.  Trying so hard to get a loan for the previous place only for it to fail was probably one of the best things that could have happened.  Farm living is wonderful, I have so much space for gardening and my mind is constantly buzzing with new projects I want to start.  The fact that I don’t hear or hardly see my neighbours is just pure bliss!

The mosquitoes are the size of houses and they have no shame when it comes to sucking on your face, and somehow they’re immune to anything citronella, but that’s just one small setback, my pimp hand has gotten strong from all the slapping I’ve done.  I slapped a mosquito so hard I actually fell over! No joke!

Everything is growing wonderfully in the raised garden and I just added a peas teepee to the garden for added whimsy.

I finally planted the medicinal garden and gave everything appropriate space to spread and grow, I planted a bunch of spreaders, but I’ll be using these things frequently.  I also added some flowers to the medicinal garden for extra prettiness.

The roses are about to bloom and seem to be doing lovely, we also added some new indoor friends into the mix.  If you remember slim Jimmy our Christmas cacti, I have some bad news.  Sadly, he got eaten by one of the dogs and fat Ricky lost his hat and face.  Farm dogs can apparently eat cacti guys.

Now! Lets look at some pretty gardening photos

Mango and Papaya Bruschetta

I love colour, my teenage self would have been so angry at that statement.  You know with all that teenage angst and I only wear black attitude, but my teenage self should just keep it zipped.

Give me a meal that looks like a beautiful rainbow, well now you’re talking. This bruschetta feels like spring on a plate, the colours are lively, its the perfect sweetness to go on a delicious toasted baguette.  Its also looks beautiful on a platter and will surely impress all your friends.

  • 1/2 cup diced mango
  • 1/2 diced papaya
  • 1 tomato, chopped
  • 1 small red onion, diced
  • 1 small red pepper, diced
  • 1 tsp chopped cilantro
  • 1 tsp chopped mint
  • 1/4 cup olive oil
  • 1/4 red wine vinegar
  • 1 tsp liquid sweetener
  • salt and pepper to taste
  • slices of French bread, toasted

In a bowl combine the mango, papaya, tomato, red onion, red pepper, mint and cilantro.

Toss the tomato mixture with the vinaigrette until well coated.

Place the mixture on the toasted French loaf and season with salt and pepper.  Serve Immediately.

If you want to make this in advance:  Make the tomato mixture and leave in the fridge until ready to assemble.

What I wore Wednesday

It seems like fall had no time to waste and decided not to easy anyone into anything.  Summer has just ended, but boy it feels like its running away as fast as possible. The air has a chill in it and my fear for winter on the farm is becoming real.

The good thing.  Cosy outfits with lots of attitude.

Protein Power Smoothie

You know those mornings where you just have no energy and by the end of the day you feel completely drained.  I’ve been having a few of those, it might be because I’m still recovering from a stomach bug, that Carl lovingly gave to me on his birthday…what a keeper, or just the changing season.

That’s how this smoothie got made.  This is a great alternative to coffee and unhealthy choices.  Filled with energy giving protein, vitamin c and antioxidants, this smoothie gives you that wake up call you desperately need without having a crash later on.

  • 1 frozen banana, peeled and chopped before freezing
  • 1/2 a large avocado
  • 1 stalk celery
  • 1 kiwi, peeled
  • 1 mango, peeled and chopped
  • 1 small apple, peeled and chopped
  • 1 cup swiss chard
  • 1 tbsp chia seeds
  • 1 tbsp flax seed oil – optional
  • 1 cup water

Blend everything in a blender until smooth.  Pour and enjoy.

Birthday Fun Day

Around here we don’t just celebrate a birthday for a day, we make it a Birthday weekend.  Birthday weekends are filled with whatever the birthday person wants to do.

We celebrated Carl’s birthday with a four layer vanilla cake with chocolate frosting and peppermint crisp tart.  The peppermint crisp tart was not vegan, but for a special little birthday boy you make whatever they want.  The peppermint crisp tart was devoured, I mean one second it was there and the next it was gone and on your birthday you don’t get lectures from me about diabetes.

We played a lot of xbox, did some  gardening projects and even fed the horses who decided to be our very large lawnmowers.  They did an amazing job,  the lawn looks wonderfully manicured, except for the giant and I mean giant horse poop right on the lawn.

Take a look at all the birthday fun

^^ Birthday presents and cake, that’s the birthday staple.  Lego what every grown man wants.

^^ Look at that big clump of grass.

^^ Look at those huge nostrils!

^^ In the carrot zone.

^^ Oldie came to say happy birthday.

Hope everyone had a lovely weekend.

Happy Birthday Carl!

Today my favourite person in the whole world was born.  My lovely soul bro (soulmate, but still bro’s) Carl, thank you for everything you have done for me and making me complete,  I don’t know what I would do without you.

Just because you wanted me to make a speech just for you here it goes.

Pumpkin, you are always so sweet, doing little things for me I would never expect all the flowers you’ve given to me every little kiss, all will be held close to my heart forever (don’t stop doing it now).  You’re smart, its nice to be able to have silly conversations with you, but at the same time I’m able to feel intellectually stimulated when we have serious things to talk about.  You’re funny and adventures, I feel like I can be my complete self around you, because you’re just as weird as me, but most of all you’re you and that’s the perfect person for me.

P.S  You’re also really handsome, I can’t forget that.

Today we celebrate you being born, I hope I can make you feel as special as I think you are.

I love you.

Roasted Vegetable Quinoa Salad with an Avocado dressing

Oh quinoa.  When I first met you I did not know ho to pronounce you, but just like Joaquin Phoenix, I finally got it right.  If you were just a little more dedicated and kept your name leaf the whole world would rejoice in your easy pronounceable name, but just like quinoa, I finally figured you out.

This salad is a great protein packed salad, that’s easy to whip up and tastes really good.   For added goodness and way more yum for your taste buds the creamy avocado dressing just makes this a show stopper.

  • 1 cup quinoa
  • 2 cups vegetable stock
  • 1 cup diced butternut
  • 1 small zucchini , diced
  • 1 small red pepper, diced
  • 1 red onion diced
  • 1 cup baby spinach, chopped

Avocado dressing

  • 1 small lime, juiced
  • 1 clove garlic

  • dash of cayenne pepper
  • salt and pepper to taste

In a medium sized pot add the quinoa and vegetable stock let simmer for 20 minutes until light  and fluffy.

Place the butternut, onion, zucchini and pepper on a baking sheet. Drizzle with olive oil and roast for 20 minutes, or until the vegetables are tender.  Remove from heat and let cool.

In a large serving bowl add the quinoa, vegetables and spinach. Toss.

In a blender add all the ingredients for the dressing and blend until smooth  if its to thick add a little bit of water.

Drizzle of quinoa salad and enjoy.

What I wore Wednesday

Lately I’ve been in to more modest clothing.  I feel like true beauty shines when we don’t show so much skin and dress more modestly.  Dressing classier just feels nice, its timeless and you just shine from the inside.

I love me some hats so I had to wear my hat, the shoes, well I need to do a perimeter check of the house before I ever where any other shoes again, these have been kept frog free and when I say I need to, I mean Carl will do it.  Yes, the frog has been back, at this rate I’m going to paint a scarlet A on it to shame it from ever coming in here again.
